Preserving 101 is a small, independent guide to putting up food at home: fermenting, canning, dehydrating, freezing, and storing it so it lasts. The goal is simple. Give people who are new to it clear, accurate instructions and straight answers about the gear, without the fluff.
Where our methods come from
Food preservation is one area where "my grandma did it this way" is not good enough. Our canning guidance follows tested sources such as the USDA Complete Guide to Home Canning and the National Center for Home Food Preservation. Fermentation guidance draws on university extension publications and the published research on salt ratios, acidity, and temperature. When we cite a number, we link to where it came from.
How we pick gear
Gear recommendations are based on manufacturer specifications, published testing, safety listings, and patterns in verified owner reviews. We say which of those a pick is based on, and we point out the tradeoffs. Affiliate links help pay for the site. They never decide a verdict.
Corrections
Spot an error or an out-of-date recommendation? Tell us and we will fix it. A preserving guide is only useful if it is accurate.
